Our pasta retail products are made in the small Italian hill town of Gragnano, nestled on the southern slopes of Mount Vesuvius just north of the picturesque Amalfi coast. Renowned as the birthplace of dried pasta, Gragnano boasts rich pasta-making traditions dating back to the late 16th century.
Having earned the prestigious European P.G.I (Protected Geographical Indication) and Gragnano Pasta Consortium certifications, our products stand as a testament to the uncompromising standards of production, provenance, and quality.
These products & accolades solidify our commitment to sustainability, making our pasta products among the most environmentally conscious choices available worldwide. Is it any wonder Italians fondly refer to our pasta as “Oro di Gragnano” a.k.a white gold?
*Please note that our pasta retail products are made in Gragnano, whilst the pasta served in our restaurants is made freshly every morning at each of our restaurants
At Emilia’s we believe the less we interfere with the natural process of pasta making the better. We’re all about letting pasta do its thing, just as nature intended. We choose only the best 100% Italian durum wheat pasta grown in the sunny fields of Tavoliere delle Puglie, Basilicata, Molise and Marche.
The spring water mixed with our wheat originates from the pristine Lattari mountains. Possessing distinctive physical qualities, this water creates a unique flavour profile to our pasta.
Our pasta is then extruded through bronze dies to ensure a superior dough & porous texture, enabling the sauce to stick better to the pasta shape itself.
Finally, our pasta is slow-dried at low temperatures, a nod to the age-old Italian tradition. P.S. It’s a widely held belief amongst Italians that slow-drying pasta is kinder to our bodies and digestion. Packaging of our pasta then occurs within 24 hours to ensure freshness.
